This IPA is fermented COLD at a chilly 12 degrees celsius using Lager yeast. It is slow fermenting and with a very clean yeast profile. It is heavily hopped with Citra and Nelson Sauvin with the hop quantities and timing matching its sister beer the HOT IPA.

This IPA is fermented HOT at a balmy 30degrees celsius using Kveik yeast. It is fast fermenting and brings out tons of fruity esters from the yeast. It is heavily hopped with Citra and Nelson Sauvin with the hop quantities and timing matching it's sister beer the COLD IPA.

Reptilian Rhapsody
DDH IPA

This mishmash of an IPA uses a mash hop to release thiols for their powerful aroma, a new england style grain bill and heavy dry hop is paired with a clean low ester producing english yeast to allow hop character to dominate over the yeast.

A classic Porter recipe is paired with a smoky chipotle chili flavour by late hotside addtions. A New England style yeast was selected to pair its fruitiness with the smokiness from the chili.


Jungle Rumble
DOUBLE OATMEAL IPA

This Double IPA is brewed with bags of flaked oats to provide a soft silky mouthfeel. A high final gravity gives it a roundness to balance the piney/earthy hotside hop additions. A double dry hop gives it a tropical jungle vibe!

The Other End of Nowhere
NEIPA

This New England IPA is brewed in collaboration with Yakima Chief Hops using their trial YCH 301 frozen cryo hops, we have decided to go with the Simcoe variety to give a single high dose dry hop with to really showcase this new hop product.

An Imperial Stout brewed with ancho & pasilla chili peppers from Mexico with lightly layered cacao additions. Pours a deep black sitting underneath à creamy thick head, this beer has a complex body with a lingering malty roastiness. The flavours are subtle and do not clash with the high alcohol levels. Sin City KO is brewed with unique ingredients intended to challenge and excite the palate.

Empress of the Knight
MÄRZEN LAGER

This Märzen was brewed with the old Oktoberfest style in mind. It is layered with dark and light Munich, Vienna and Pilsner malts and hopped with Hallertau Perle leaf and Strisselsplatz for a French touch in this German classic.

Eternal Brumance

Our first triple IPA is a celebration of the Simcoe hop variety. We have layered the boil with additions of Simcoe throughout as well as a mega dose in the whirlpool. To finish this beer off we have double dry hopped it with copious amounts of Simcoe cryo hops. Coming in at 10% this one is to be enjoyed in moderation!

Juice Comme Sour
SOUR IPA

Using the base recipe from our regular beer Juice Comme Ça, we let this beer slowly sour during the fermentation process. The result is a sour IPA with a balance between hop flavour and bitterness and the light sourness which just shines through making it a great thirst quencher for the hot days ahead!



No War, Please

No War, Please is a variation on our house Blonde beer No Predators, Please. The grain bill remains the same however the dry hop of Nelson Sauvin is replaced by Hopburst Victory, a natural hop oil extract which gives a lychee and passion fruit aroma to the beer. A donation from the proceeds of this beer will be made towards a charity supporting the victims of the war in Ukraine.

An Imperial Stout at 9.5% ABV, brewed and conditioned with completely natural shredded unsweetened coconut. This beer has a thick body with a complex structure with a delicious lingering roastiness alongside a balanced sweet finish. Niu Kafa (Samoan for Coconut) is brewed with ingredients that we expect to challenge and stimulate the palate. Enjoy in a small snifter glass for the optimal drinking experience.



Last Call for Bésixdouze

The Last Call for Bésixdouze is an evolution of our recent popular release ‘Into the thick of it’. We have maintained the extra thick body with high wheat and oat content and amped up the hoppiness by pairing the Galaxy hops with BBC Mosaic. Large whirlpool hop additions give a nice bitterness to balance it all out.

Lost in an Incomprehensible Maze

This double dry hopped beer has a smooth creamy body from an oat biased grain bill and minimal hot side hop additions. Pineapple and stone fruit aromas from El Dorado and Azacca hops add a tropical feel to this beer making it dangerously sessionable.

IMPERIAL WEST COAST IPA

In a nod to the original US pioneers of the modern craft beer movement this IPA makes use of classic west coast hops to give bitterness and flavour to the beer. Chinook whole leaf is the star and is brought out through our hot side hop back, a decent dry hop with west coast heavy weight Cascade finishes it off. True to the style the complexity from the malts used balances the heavy hop additions along with an Imperial amount of booze to wash it down.
